All of a sudden you see them popping up: green asparagus! Because they aren’t available for a very long time, I will definitely make my favourite lunch dish at least once a week.
This recipe originally is from Jamie Oliver, I have just made some changes to it. For example, I do not poach the eggs, too complicated, and a soft-boiled egg tastes as delicious. I also added some pesto: the combination of green asparagus, egg and pesto is a match made in heaven!
GREEN ASPARAGUS WITH SOFT-BOILED EGGS ON TOAST
Preparation time: 20 minutes
- 4 slices of bread (cereal, whole grain or something like that)
- 12 green asparagus
- 4 eggs
- (homemade) pesto
Toast the bread, put it on two plates and cover the slices with some homemade pesto.
Meanwhile, soft-boil the eggs and grill the asparagus a few minutes per side.
Put the grilled asparagus on the slices of bread with pesto and place the halved, soft-boiled eggs on top of the asparagus. Season with some pepper and salt to taste, add some parmesan flakes if you want and serve immediately.
