Perfect lunch with green asparagus

All of a sudden you see them popping up everywhere: green asparagus! Because they aren’t available for a very long time, I will definitely be making my favourite lunch dish at least once a week while they are around.

This recipe is originally from Jamie Oliver, I have just made some changes to it. For example, I do not poach the eggs, too complicated, and a soft-boiled egg tastes just as delicious. I also added some pesto: the combination of green asparagus, egg and pesto just is a match made in heaven!

GREEN ASPARAGUS WITH SOFT-BOILED EGGS ON TOAST

Serves: 2 (as lunch)
Preparation: 20 mins

INGREDIENTS

  • 4 slices of bread (cereal, whole grain or something like that)
  • 12 green asparagus spears
  • 4 eggs
  • (homemade) pesto

METHOD

Toast the bread, put it on two plates and cover the slices with some homemade pesto.

Meanwhile, soft-boil the eggs and grill the asparagus a few minutes per side.

Put the grilled asparagus on the slices of bread with pesto and place the halved, soft-boiled eggs on top of the asparagus. Season with some pepper and salt to taste, add some parmesan flakes if you want and serve immediately.
