Refreshing watermelon feta salad with mint and black olives

Summer time is barbecue time! That’s why I want to share a recipe for one of my favourite salads, as a refreshing and healthy accompaniment to any barbecue. Mixing watermelon with feta, mint and black olives might seem like a weird combination, but it tastes amazing. In fact, it is so addictively delicious that now we can’t have a barbecue without this Summer salad as a side dish.

If you are having a big barbecue cookout, this crowd-pleaser is quick and easy to make in large quantities. Or, if you are only a small group of people, you simply prepare this salad by only using part of the watermelon and then you can serve the leftovers as a snack. I hope you enjoy this salad as much as we do! The original recipe is Nigella’s; although it might have changed here and there as I have been making the salad for years.

WATERMELON FETA SALAD WITH MINT AND OLIVES

Serves: about 8 to 10 people
Preparation time: 20 minutes

INGREDIENTS

  • 1 red onion
  • 2 limes or lemons
  • 1.5 kilos watermelon
  • 250 g feta
  • small bunch of mint
  • 4 tbsp extra virgin olive oil
  • 100 g black olives
  • pepper and salt to taste

METHOD

Halve the onion and slice it into thin slices. Squeeze the juice out of the limes and pour the juice over the sliced onion. Leave it while you prepare the salad, so the onion and juice will become beautifully pink.

De-seed the watermelon as much as you can and cut it into 4cm triangles. Cut the feta cheese into cubes and chop the mint.

Put the watermelon, feta and mint in a large bowl. Add the onion with the juice and the black olives and toss the salad. This way you won’t squash the watermelon. Add salt, pepper and olive oil to taste and serve immediately. Happy grilling!
